Valentine’s Day Dessert

This last week we were lucky enough to have some beautiful weather and sun. I realize most people dont even think about this, however being born/raised in California all my life, and then moving to Seattle…the weather is HUGE to me. Maybe I am affected by it more than others…I am very aware of how it makes me feel.

So with the gorgeous weather, in a GREAT mood, and remember Valentine’s Day is right around the corner…I decided to whip up an easy and fun little treat. This would be great to make for your sweetheart because its delicious, guilt free and super easy.

I wanted to do something that looked similar to a parfait but involved a few ingredients. So at the local grocery store I grabbed some fresh blueberries, raspberries and heavy whipping cream. Im sure if your serving dish was large enough, you could add ice cream, crumbled cookies, etc…

Berry Parfait Recipe:

-1 small carton blueberries

-1 small carton raspberries

-1 cup heavy whipping cream

– 3/4 to 1 cup sugar


Pour heavy cream in a mixing bowl and whip with hand blender until it starts to stiffen up. Add the sugar 1/4 cup at a time, then blending some more. (Do not over mix because the whip cream will be too stiff).
Once all the sugar is incorporated set aside. The consistency should be a little on the softer side (not too stiff).

In a martini or wide mouth (pretty) glass add a few blueberries, then a layer of whip cream, then a layer of raspberries, another layer of whip cream and so on. You can choose to add them in any order you like.

Serve with a spoon and enjoy!

Add chocolate syrup, cookie crumbles, ice cream, or other fruit.
